Turkey Veggie Sloppy Joes

In my house meat is king. We are not vegetarians in any way. Almost every meal has a animal based protein. Well, sometimes my meat budget is not as much as I would like. A couple years ago my husband was low on work and I had a pound of ground turkey and was trying to figure out a way to make that stretch for two meals instead of one. How about I add just as much veggies as meat? How would that taste? Would I be eating a salad on a bun? I personally put the carrots and celery in the food processor to mince them up. You could probably just chop them up small, but I need to sneak veggies in for myself. Feel free to add more spices, I usually change up which spices I add each batch to give it a different flavor.

Turkey Veggie Sloppy Joes

Ingredients

  • 1 cup minced carrots
  • 1 cup minced celery
  • 1 cup diced onions
  • 1 cup diced peppers
  • 2 Tablespoons minced garlic
  • 1 package ground Turkey
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons Brown Sugar
  • 1/2 Tablespoon (or to your liking) of Red Pepper Flakes
  • 1/2 teaspoon salt
  • 1 Jar Pasta Sauce
  • 1 package buns

Instructions

  • Saute veggies in a little bit of olive oil or butter to preferred doneness and set aside. I leave them a little crisp as they will cook a little more in the sauce.
  • Brown Ground Turkey until cooked through.
  • Add the veggies back in.
  • Add the Worcestershire Sauce, Brown Sugar, and Pasta Sauce.
  • Simmer about 15 minutes
  • Serve on toasted buns.

  • turkey-veggie-sloppy-joeAnother great thing about this meal is that it is freezer friendly. Double or triple the recipe and freeze. Just reheat in microwave until warmed through- perfect for summer days when you don’t want to turn the oven on!
