In my house meat is king. We are not vegetarians in any way. Almost every meal has a animal based protein. Well, sometimes my meat budget is not as much as I would like. A couple years ago my husband was low on work and I had a pound of ground turkey and was trying to figure out a way to make that stretch for two meals instead of one. How about I add just as much veggies as meat? How would that taste? Would I be eating a salad on a bun? Well, I tried it out and my husband and I loved it. It is the perfect healthy way to stretch the meat budget.
I personally put the carrots and celery in the food processor to mince them up. You could probably just chop them up small, but I need to sneak veggies in for myself. Feel free to add more spices, I usually change up which spices I add each batch to give it a different flavor.

Another great thing about this meal is that it is freezer friendly. Double or triple the recipe and freeze. Just reheat in microwave until warmed through- perfect for summer days when you don’t want to turn the oven on!
