Strawberries and summer just go together. This Strawberry Cheesecake Frozen Pops recipe combines summer strawberries and cheesecake and combines them into one amazing popsicle!

I just love cheesecake. My favorite is chocolate and my husband’s is strawberry. This recipe is one that he devours and praises me for.

You probably have most of the ingredients (minus the strawberries) for this recipe in your fridge and pantry.

A simple way to crush the graham crackers is to put them in a baggy and hit the bag with a rolling pins or canned good. Make sure the air is out of the bag though. One time I forgot and crumbs flew everywhere. You don’t want the graham crackers to be a fine dust for this recipe. A little chunky is fine.

Set the crumb mixture aside.

When I make these again I will give the strawberries a bit of a crush rather than cutting them.

In a food processor or mixer, combine the cream cheese, strawberries, powdered sugar, milk, and yogurt. Mix into a smooth texture. Fold HALF of the graham cracker mixture into the popsicle filling.

Spoon the popsicle filling into the popsicle molds, leaving some room at the top/base for graham cracker crust.

Spoon the remaining graham cracker mixture into the popsicle molds, firmly pressing into place. Place in the freezer. Once frozen, you can transfer to a freezer safe bag for storage so they don’t get freezer burnt.

Ingredients

  • 1 cup graham crackers, crushed
  • 4 Tbsp melted butter
  • 1 8 oz package of cream cheese
  • 2 cups strawberries, halved or quartered
  • 1/2 cup powdered sugar
  • 1/3 cup milk
  • 1/4 cup strawberry cheesecake or vanilla yogurt

Instructions

  1. In a bowl, thoroughly combine the crushed graham cracker and melted butter. Set aside.
  2. In a food processor or mixer, combine the cream cheese, strawberries, powdered sugar, milk, and yogurt. Mix into a smooth texture.
  3. Fold HALF of the graham cracker mixture into the popsicle filling.
  4. Spoon the popsicle filling into popsicle molds, leaving some room at the top/base for graham cracker crust.
  5. Spoon the remaining graham cracker mixture into the popsicle molds, firmly pressing into place.
  6. Freeze and enjoy!
