I found this recipe from Real Mom Kitchen and it makes a great freezer meal!
Just throw all the ingredients (minus the cornstarch and rice) into a freezer bag and dump into the crockpot when ready to cook! This is one of my husband’s favorite meals. We make it several times a year. The ingredients are very simple and usually pretty cheap.
- 1 lb. boneless, skinless chicken thighs ( diced in 1 in cubes) The original recipe has you do it after you cook it but I find this easier when prepping several meals at a time.
- salt & pepper to taste
- 1/2 cup diced onion
- 1/2 cup soy sauce, I used a soy sauce alternative since I can't have soy
- 1 cup honey
- 1/4 cup ketchup
- 2 tbl. canola oil
- 2 cloves garlic ( I always add more than that though- I LOVE garlic)
- 1/2 tsp. red pepper flakes
- 1-2 TBL cornstarch
- hot rice
- sesame seeds, optional
