Honey Bourbon Chicken

Thank you for sharing!

I found this recipe from Real Mom Kitchen and it makes a great freezer meal!

Honey Bourbon Chicken

Just throw all the ingredients (minus the cornstarch and rice) into a freezer bag and dump into the crockpot when ready to cook! This is one of my husband’s favorite meals. We make it several times a year. The ingredients are very simple and usually pretty cheap.

Honey Bourbon Chicken

  • 1 lb. boneless, skinless chicken thighs ( diced in 1 in cubes) The original recipe has you do it after you cook it but I find this easier when prepping several meals at a time.
  • salt & pepper to taste
  • 1/2 cup diced onion
  • 1/2 cup soy sauce, I used a soy sauce alternative since I can't have soy
  • 1 cup honey
  • 1/4 cup ketchup
  • 2 tbl. canola oil
  • 2 cloves garlic ( I always add more than that though- I LOVE garlic)
  • 1/2 tsp. red pepper flakes
  • 1-2 TBL cornstarch
  • hot rice
  • sesame seeds, optional

  • Salt and pepper chicken and place in your slow cooker/ freezer bag.
  • Layer onion on top of chicken.
  • In a medium sized bowl, combine honey, soy sauce, ketchup, oil, garlic, and red pepper flakes. Pour mixture over the chicken in the crockpot or pour into freezer bag.
  • Cook on low for 3-4 hours.
  • Once chicken is done; in a small bowl, combine 1 Tbsp cornstarch with 1 Tbsp water. Pour into sauce remaining in the crock pot and stir to combine. If sauce is not thick enough repeat with another Tbsp of the cornstarch/water.
  • Serve over cooked rice and steamed veggies and sprinkle some sesame seeds on top.

5 Tips to Save Money on Food Costs (Guest Post from Pixie Dust Savings)

[...] Money-Saving Tip #4: Freezer Cook. A lot of times people eat out because they feel they do not have time to cook, or they are too tired from working all day. Running through the drive through or picking up a pizza is an easy way to end a day. There are 2 ways to prepare freezer meals. One way is to make a double portion of a meal you are already cooking and store it in the freezer. The second way is to spend a whole day cooking up a storm and then freezing those meals. Another plus to freezer cooking is that you know what is in your food. Check out two of my favorite freezer meals: Turkey Veggie Sloppy Joes and Crockpot Bourbon Chicken. [...]
