One of the most delicious breads at Walt Disney World is the Pineapple breakfast bread at ‘Ohana. This recipe, while not the same, has a lot of the same Hawaiian flavors and reminds me of that tasty bread. This Hawaiian Bubble bread recipe is so easy to make and takes you back to Disney’s Polynesian any time you want.

Hawaiian Bubble Bread
What is Bubble Bread? Bubble bread is another name for Monkey Bread. Bubble bread is made from biscuits cut into pieces and then mixed with different ingredients and put into a loaf or bundt pan. This is something fun to make with kids because no mixer is needed.
This Hawaiian Bubble Bread would make an awesome side to my Huli Huli Chicken.
Hawaiian Bubble Bread Ingredients:
- 3-16oz can Homestyle Biscuits
- 2 Tbsp sugar
- 1/2 C unsalted sweet cream butter
- 2/3 C light brown sugar
- 1 C toasted coconut.
- 1 C maraschino cherries cut in half
- 3 C pineapple chunks, juice drained
This recipe calls for canned biscuits. I have tried several off-brand refrigerated biscuits and very few live up the fluffiness and taste of Pillsbury Grands. I am a brand snob to very few foods and products but biscuits are one of them.
One of the ingredients in this recipe is toasted coconut. Simple buy flaked coconut and toast it. For the Pioneer Woman has great directions for toasting it yourself.
Dishes Needed to Make Bubble Bread
- 1 9×12 glass loaf pans
- 1 cookie sheet
- 1 Large mixing bowl
Hawaiian Bubble Bread Directions
Preheat oven to 350 degrees and spray a loaf pan with Pam or Baker’s Joy baking spray, set aside.
Cut each biscuit round into quarters, 4 pieces and place in a large bowl.
Mix the biscuit pieces with the white sugar, set aside.
Mix in the pineapple chunks until combined.
Mix in the Sliced cherries until combined.
Mix in the toasted coconut until combined.
Place into the loaf pan
Using a medium pot over medium heat, melt the butter.
Whisk in the brown sugar until melted and smooth
Pour over the biscuits in the loaf pan
Place loaf pan on cookie sheet to prevent spillage onto your oven surface.
Bake for 45-50 minutes or until dough is completely cooked in the middle. You can check this by moving around a few pieces around the center to see if they are too doughy. Don’t overbake it though because it will come out dry.
Allow to cool completely before removing and cutting into 1 inch slices.

How to Store Your Hawaiian Bubble Bread
Room-temperature storage is your best bet for maintaining freshness if you intend to eat the bubble bread within a couple of days. Store the bubble bread in a plastic bag and out of direct sunlight.
The Beat Way to Reheat Bubble Bread
Preheat your oven to 250 degrees Fahrenheit. Spray Pam cooking spray or butter on the inside of a pan. Put bubble bread leftovers in the greased or oiled pan.
Place the pan of monkey bread into the oven. Let it reheat for about five minutes. Carefully touch the monkey bread with an ungloved hand to see if it is sufficiently warm. If it is not warm enough keep checking once per minute to make sure the glaze doesn’t become runny as it reheats. When the monkey bread is ready, take the pan out of the oven, plate, and enjoy!
