I love sweet potatoes. I know they are healthier for you than regular potatoes because they are fiber filled! During the winter I make a lot of oven baked sweet potato fries and usually don’t think about sweet potatoes for the spring/summer season. I was at Save-A-Lot the other day with my husband and we found this HUGE sweet potato. It was 2.3 lbs. My husband couldn’t resist it so we got it, it was only 33¢/lb anyways . Since I love to grill, I thought I would come up with a recipe to make a sweet potato recipe for the grill. I am also kind of obsessed with foil packet recipes.
I melted 4 tablespoons of butter, added 4 tablespoons brown sugar, and 1 tsp. cinnamon for the sauce.
I tossed the sauce mixture with the copped sweet potatoes.
I then divided up the sweet potatoes and placed into foil packets.
I placed the packets on med-low heat and grilled for about 20 minutes.
The sweet potatoes came out perfect and came right out of the foil packet. I was kind of surprised considering the 2 tablespoons sugar. They were moist and a little bit sweet.
I paired the sweet potato packet recipe with a Smithfield Peppercorn Pork Loin that I had got on sale with a Winn-Dixie BOGO sale. The spicy pork loin and the sweet, sweet potato flavor went together fabulously!! This sweet potato recipe is one I will definitely make again.
