Summertime is officially here! Sales galore on summer fruits, veggies, and ribs!! I love ribs! I love grilling as well. Here is a Grilled Barbecued Spare Ribs recipe I love. My loving husband loved them so much, he ate until he could eat no more. This recipe is very simple and can be done ahead of time. I got my ribs for $1.79/LB at Winn-Dixie last week, anything under $2 a pound is good for me. I also picked up some BOGO ground turkey ($2 ea.) and a Pick 5 for $4 special on Smithfield Pork Loins. . I had a $5/$30 coupon so my savings really added up.
First, oil down some foil, then you mix up a rub and spread on both sides of the spare ribs. Then you wrap tightly in foil and let the rub marinate the meat for a couple hours or so.
Next, you roast the pork in the oven. Preheat the oven to 300 degrees and roast for about an hour or until the meat is fork tender. Take out and refrigerate them until you are ready to grill.
Now, in the next step you can cheat and use some store bought barbecue sauce, but I prefer making my own.
Time for grilling!! Heat grill to medium high. Basically you are just reheating the ribs and getting that barbecue sauce all nice and caramelized. BRUSH grill with oil. I forgot this step and husband loved me afterwards while he was cleaning the grill, lol. Place oven-roasted ribs on the grill rack and brush with barbecue sauce. Cook for 5 to 8 minutes, turn, brush with barbecue sauce, and cook for 5 minutes longer. Remove from grill and keep warmed until you are ready to serve.
