I am always on the hunt for a great breakfast on the go for my husband. Between two jobs, school, and clinicals the only breakfast he gets is one on the go. I saw these Pancake muffins floating around on Pinterest and decided to give them a try. I didn’t see any recipes that used instant pancake mix, so I made my own recipe. It only took me 2 tries to get them sweet enough for my liking.
I started by making the pancake mix, but substituting some of the water for maple syrup. By the end of my kitchen experiment I decided that for every 1/2 c. water that is added I would add 1/4 c. syrup. My particular pancake mix called for 3/4 cup water. I changed that to 1/2 c. water and 1/4 c. syrup. I filled the Mini Muffin Pan with about 1 tablespoon of mix and then added some maple sausage to some and mini chocolate chips to the others. Blueberries are on sale this week at Winn-Dixie, so I will be making some more and using blueberries.
Another thing I love about these are that they can be made ahead of time and then put in the freezer. Pull them out the night before then microwave in the morning for about 20 seconds.
